 Ingredients (Serves 12):

  • 150g softened butter
  • 150g caster sugar
  • 3 lightly beaten eggs
  • 150ml whole milk
  • 375g sifted plain flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 225g blueberries

Method:

  1. Preheat the oven to 200°C (180°C fan)/Gas 6. Line a 12-hole muffin tin with paper cases.
  2. With a stand mixer or an electric hand mixer, blend the butter and sugar until light, pale, and fluffy.
  3. Gently add the eggs, stirring well with each addition. Slowly pour in the milk, mixing gently as you proceed.
  4. Sift together the flour, baking powder, and salt.
  5. Carefully fold the dry ingredients into the wet mixture, being mindful not to overmix, as this can make the muffins dense. It’s okay if the batter is slightly lumpy. 
  6. Gently fold in the blueberries, trying not to squash them.
  7. Spoon the batter into the muffin cases, filling each about two-thirds full.
  8. Bake for 18-20 minutes, or until the muffins are golden, spring back when touched, and a skewer comes out clean.
  9. Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely. Store in an airtight container for a couple of days, though they’re best enjoyed fresh out the oven whilst they are still warm.
